Der wichtigste Naturfarbstoff ist der gr\u00fcne Farbstoff der Pflanzen, das Chlorophyll (Blattgr\u00fcn). Durch das Chlorophyll k\u00f6nnen Pflanzen mittels Photosynthese Lichtenergie in innere Energie umwandeln. Diese innere Energie wir in Traubenzucker gespeichert.<\/p>\n

\"Naturfarbstoffe\"<\/p>\n

In der Natur kommen zwei verschiedene Varianten des Chlorophylls vor: Chlorophyll a und Chlorophyll b. Die beiden Molek\u00fcle unterscheiden sich nur in einem Rest R. Beim Chlorophyll a handelt es sich um eine Methylgruppe (-CH_3), beim Chlorophyll b ist der Rest eine Carbonylgruppe (-CHO). <\/p>\n

Die gr\u00fcne Farbe der beiden Molek\u00fcle resultiert aus dem ausgedehnten \u03c0-Elektronensystem im oberen Teil des Molek\u00fcls. Es werden \u00fcberwiegend blaues und rotes Licht absorbiert, woraus sich eine gelbgr\u00fcne Farbe ergibt. Chlorophyll b hat sein Absorptionsmaximum im kurzwelligeren Bereich als Chlorophyll a, was an der Carbonylgruppe liegt. Da das konjugierte System ist hier um eine Doppelbindung gr\u00f6\u00dfer, wodurch weniger Energie ben\u00f6tigt wird, um die Elektronen anzuregen.<\/p>\n","protected":false},"excerpt":{"rendered":"
